At the time of writing there are some known issues with sending Meeting Requests externally from Exchange 2007 through MessageLabs if the "Exchange Rich-text format" is set to anything but "Always Use". This seems to result in plain text meeting requests at the recipient end.

"*In "Hub Transport Role" on Exchange 2007 settings, add the recipient’s ___domain as a remote ___domain and set it to always use "rich text format" when sending to that ___domain. Then you should be able to send new meeting requests to that ___domain, and the recipients will receive them as normal meeting requests and be able to accept them. " - is taken from the above MessageLabs link. Again, this is subject to change and MessageLabs are the people to speak to on this.
